Vegan Broccoli and Cheddar Soup

I used an immersion blender (twice: once pre broc and once post broc)
Used two red potatoes
Threw in about double the amount of nooch called for in the recipe
Used about 1/3 cup vegan cheddar
Added sage, oregano, parsley, basil thyme and crushed red pepper to taste
I love to try new recipes, indulge in cheese... SIP bubbly DRINKS!
